I keep meaning to share this, and maybe I have at some point in the last 7 years, but today is the day I share it for the first time or the second, who cares!! It is so good. Want to make your family go wow? Want a treat for yourself before work to start your mornings off right? It’s a perfect breakfast for a summer morning. Dutch Pancakes with fresh berry top. Who can resist! Certainly not this girl! Made really quickly, even the man of the house was able to grab a piece before he had to leave for work. It doesn’t drag you down and the kids will devour it!

Dutch Pancakes with Fresh Berry Topping

This light meal is perfect to start your day off in the summer. Not to light, the only sugar is in the berries
  • 2 tablespoons butter or margarine
  • 2 eggs
  • 1/2 cup of all-purpose flour
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 2 cups assorted fresh berries
  • Powdered sugar, if desired
  1. Directions
  2. Heat oven to 400°F. In 9-inch glass pie plate, melt butter in oven; brush butter over bottom and side of pie plate.
  3. In medium bowl, beat eggs slightly with wire whisk or hand beater. Beat in flour, milk and salt just until mixed (do not overbeat). Pour into pie plate.
  4. Chop your strawberries if using them, and mix together.
  5. Bake 25 to 30 minutes or until puffy and deep golden brown.
  6. Put one pat of butter on each and melt, sprinkle with a little powdered sugar.
  7. Serve pancake immediately topped with berries. Sprinkle with powdered sugar.
You can use bananas and peaches, whipped cream on top if you want to be decadent. You can even use chocolate sauce, bananas and whipped cream. But this is the most wonderful thing to have in the morning to get yourself going without a heavy lead of a greasy breakfast in your belly. Recipe is adapted from my great grandmother. My mum used to make it for us on a hot summer day so we wouldn’t be to full.
